Restaurant Manager / Sommelier
to lead front-of-house and help bring this exciting new concept to life.About the Role:This is a hands-on, guest-facing position with responsibility for both FOH operations and wine service. Youll set the tone on the floor each nightpacing service, welcoming guests, and guiding them through our food and wine offering.With a 40-hour work week and evenings-only service Tuesday to Saturday, this is an opportunity to manage a high-quality room with excellent work-life balance and space to focus on genuine, detail-driven hospitality.What Youll Be Doing:Leading front-of-house operations during prep and service
Recommending wines and delivering thoughtful, confident wine service
Managing bookings, floor planning, and guest pacing
Overseeing daily opening/closing routines and shift organisation
Recruiting and training a small, motivated team
Maintaining high standards of cleanliness, attentiveness, and guest care
Collaborating with the kitchen team and ownership on service strategy and guest experience
About You:Previous experience as a Restaurant Manager, Assistant Manager or Sommelier in a quality-focused venue
Confident and knowledgeable in wine service, pairing, and guest education
Passionate about food, wine, and warm, professional hospitality
Calm, composed, and efficient in busy service
Comfortable leading a small team and setting the tone on the floor
Organised, proactive, and clear in communication
A team player with a strong sense of pace, rhythm, and attention to detail
