Key Responsibilities Kitchen Operations - Lead the day-to-day running of the kitchen. - Deliver consistent food quality and presentation in line with Smoky Boys specifications. - Ensure ticket times and service standards are consistently achieved. - Monitor food preparation, cooking and plating during every service. - Maintain a clean, organised and safe kitchen. Team Leadership - Create rotas that meet business needs while controlling labour costs. - Coach and motivate the team to achieve exceptional performance. - Conduct regular performance reviews and training sessions. - Promote a positive, professional and respectful working culture. Food Safety and Compliance - Ensure full compliance with Food Hygiene Regulations and HACCP procedures. - Achieve a 5-star food hygiene standard. - Manage allergen controls and ensure accurate food labelling. - Complete all daily, weekly and monthly food safety documentation. - Ensure health and safety policies are followed at all times. Stock and Financial Control - Manage ordering and supplier relationships. - Control food GP by minimising waste and ensuring correct portion control. - Monitor stock rotation and reduce food waste. - Work within agreed labour and food cost budgets.
