REPORTING TO: GM, Head ChefLOCATION: Chez Lui, 184a Kensington Park Road, Notting Hill, LondonPOSITION TYPE: Full-TimePAY: £60,000 OTE per annumPOSITION OVERVIEW:As a Sous Chef, you will work closely with the Head Chef to ensure the smooth and efficient operation of the kitchen. Your exceptional culinary skills, leadership abilities, and attention to detail will contribute to the overall success of our establishment. This is an excellent opportunity for a passionate culinary professional looking to make a significant impact in a fast-paced and dynamic environment.RESPONSIBILITIES:Culinary Excellence:Assist the Head Chef in creating and developing innovative menus that align with the restaurant''s concept and vision.Prepare and cook high-quality dishes, ensuring taste, presentation, and consistency.Oversee food preparation, including portioning, seasoning, and cooking techniques, to maintain high standards.Train and mentor kitchen staff, ensuring they adhere to proper culinary techniques, safety, and sanitation guidelines.Collaborate with the Head Chef to monitor food inventory levels and ensure timely ingredient orders to avoid shortages.Stay updated on current culinary trends and introduce new techniques and ingredients to enhance the menu offerings.Kitchen Operations:Supervise the kitchen team during service, ensuring a smooth and efficient workflow.Delegate tasks to kitchen staff, maintaining a high level of organization and productivity.Monitor and maintain kitchen equipment, ensuring they are in proper working condition and report any maintenance or repair needs.Maintain cleanliness and sanitation standards in the kitchen, following health and safety regulations.Implement and enforce proper food handling procedures, including storage, labelling, and rotation of ingredients.Team Leadership:Assist the Head Chef in recruiting, hiring, and training new kitchen staff members.Lead by example, demonstrating professionalism, excellent work ethic, and a positive attitude.Motivate and inspire the kitchen team to perform at their best and maintain a harmonious work environment.Conduct regular performance evaluations, providing constructive feedback and identifying areas for improvement.Foster a culture of teamwork, cooperation, and open communication among kitchen staff.Menu Development and Cost Control:Collaborate with the Head Chef to develop and refine menu items, taking into account customer preferences, seasonal availability, and cost efficiency.Monitor food costs and portion control, minimizing waste and ensuring profitability without compromising quality.Assist in conducting regular inventory audits to maintain accurate stock levels and control food costs.Identify opportunities to improve operational efficiency and cost-effectiveness, suggesting appropriate solutions.QUALIFICATIONS AND REQUIREMENTS:Proven experience as a Sous Chef or similar role in a high-volume restaurant or culinary establishment.Extensive knowledge of culinary techniques, flavour profiles, and food presentation.Strong leadership and organizational skills, with the ability to prioritize tasks and manage multiple responsibilities.Excellent communication and interpersonal skills to effectively collaborate with the kitchen team and communicate with other staff members.In-depth understanding of food safety and sanitation regulations.Creative mindset with a passion for culinary arts and a desire to continually learn and develop new skills.Ability to thrive in a fast-paced environment and handle pressure with composure.Availability to work flexible schedules, including evenings, weekends, and holidays as needed.BENEFITS:Competitive salary.Opportunities for career advancement and professional development.Employee discounts on meals.A supportive and inclusive work environment.Pension Scheme at workReady to cook food with a soul?Reply to this job advert with your CV and a short intro (tell us your favourite comfort dish!)All applicants must be over 18 years old, reside in UK and have a right to work in the country.
